Meyer Lemon Cake with Meyer Lemon Curd Filling

1 box World Classics Trading Company® Meyer Lemon Cake, prepared according to instructions
3 large eggs
1/3 cup sugar
1/2 cup fresh Meyer Lemon Juice*
6 tablespoons butter, cut into small pieces
1/4 teaspoon almond extract or 1/2 teaspoon vanilla extract
1 cup whipped cream

In a medium saucepan, whisk together eggs and sugar until light in color. Add lemon juice and butter; cook over medium heat, whisking until butter is melted. Continue whisking until the mixture is thickened; stir in extract. Cool and refrigerate to thicken. Cut cool World Classics Trading Company® Meyer Lemon Cake into three horizontal layers. Spread half of lemon curd between bottom two layers, and remainder between top two layers. Decorate cake by piping or making dollops of whipped cream.

*If Meyer lemons aren’t available, substitute juice of fresh regular lemons.
